Last week I mentioned my parents had brought us lots of fresh vegetables from their garden. In order to fully enjoy having garden veggies, I made creamed peas and new potatoes, beet pesto pasta and now broccoli salad.
Broccoli Salad Recipe
Broccoli is a normal vegetable to have in our house, but we typically buy it frozen. Because of that, I didn’t want to cook this fresh broccoli. That just didn’t seem like the best way to enjoy the rare treat of having fresh broccoli. So instead, I created a broccoli salad using one of my favorite ingredients — Greek yogurt!
Ingredients
- 4 cups fresh broccoli cut into bite-sized pieces
- 1/2 cup dried cranberries (or raisins)
- 4 strips of bacon, cooked and crumbled (I use this tool to cook bacon quickly with little mess.)
- 2 oz cheddar cheese, freshly shredded (Colby Jack also works well)
- 1 cup Greek yogurt (I save money by making homemade Greek yogurt.)
Instructions
- Simply mix all ingredients together in a bowl. Serve right away or store in air tight container in refrigerator for up to 2 days.
It doesn’t get much easier than this! The only problem is my 3-year-old is not a fan of the crunchy, green broccoli. But, my 9 year old loves this salad!
